Golden Cloud & Beacon Carrot Cake Cheesecake Bars

Golden Cloud Carrot mix is easy to make and bakes in just 30 minutes with the addition of just 3 ingredients.

500g Golden Cloud Carrot Cake Mix
150ml sunflower oil
250ml water
2 large eggs
Sunflower oil, for deep frying

2 tubs cream cheese
½ granulated sugar
1 tsp vanilla essence
2 eggs


Preheat the sunflower oil in a pot for frying.
In a jug, combine the oil, water and eggs. Place the Golden Cloud Carrot cake mix in a medium sized bowl. Make a well in the centre of the cake mix and add wet ingredients. Mix until smooth. Set aside.
In a large bowl, beat together the cream cheese, sugar, and vanilla with an electric whisk until smooth. Add the eggs one at a time and blend until smooth and set aside.
Spread HALF of the carrot cake batter into the prepared pan. Spoon dollops of cheesecake batter on top. Then spoon dollops of the remaining carrot cake batter into the pan. Swirl with a knife to create a marbled look
Bake in the oven for 20-30 minutes or until a toothpick inserted comes out clean.
