Golden Cloud Mini Milk Tarts with Rooibos Honeybush Tea

Mini milk tarts are everything, with a creamy filling and a perfectly crisp base, they are what memories are made of.

Ingredients:

For pastry:
½ cup butter, softened
1 cup white sugar
1 egg
1 tsp vanilla essence
2 cup Golden Cloud Cake flour
2 tsp baking powder
Pinch of salt

Milk tart filling:
1 cup milk
10g butter
1 tsp vanilla essence
1 tsp ground cinnamon
2 tbsp Golden Cloud Cake flour
2 tbsp cornflour
¼ cup Selati White Sugar
pinch of salt
1 egg

2 tsp ground cinnamon, for dusting

Tea:
4 teabags of rooibos honeybush
1L water, boiling water
4-6 slices of lemon
4 tbsp honey

Method:

Preheat the oven to 180C and prepare 6 mini tart shells
In a medium bowl, cream together the butter and sugar. Add the egg and beat until smooth. In a bowl sieve together the flour, baking powder and salt. Stir the flour mixture into the sugar until thoroughly combined. Press the mixture into the bottom into the tart shells to a 3mm thickness. Trim of any excess pastry off the edges with a sharp knife.
Blind bake in oven for 10-15 minutes, until golden brown. Allow to cool completely.
In a saucepan make the milk tart filling; combine half the milk, butter, vanilla essence and cinnamon. Bring to a gentle simmer. In a bowl whisk egg, add the flour, cornflour, remaining milk, sugar and salt until smooth. Slowly temper the hot milk into the egg mixture. Add the whole mixture back into the saucepan and whisk until the mixture thickens. Once thickened, pour the mixture into a bowl and cover with plastic wrap directly touching the mixture and cool.
Fill the tart cases with the filling, spreading evenly. Place the tarts in the fridge until ready to serve.
Before serving, dust with cinnamon and enjoy!
For the tea, place the teabags in a tea pot with boiling hot water. Allow to steep, add the lemon slices and honey. Serve.

Chefs Tip: Allow your pastry cases to cool completely before adding the filling to ensure that you have a beautifully crisp base.
