Golden Cloud Spinach Chili Bites and Masala Chai
A staple at an Indian-inspired High Tea party!

Ingredients:
Masala chai powder:
2 cinnamon sticks
½ tsp black peppercorns
½ tsp white peppercorns
½ tsp fennel seeds
4-6 cloves
6-7 cardamom pods
¼ tsp ground nutmeg powder
¼ tsp ground ginger powder (dry)
Masala Chai:
2 tbsp loose tea leaves (or 4 tea bags)
1 tsp fresh ginger, crushed roughly
500ml boiling hot water
200ml evaporated milk
200ml condensed milk
300-400ml full cream milk
Sugar to tase
1 tbsp Masala Chai Powder Blend
Chili Bites (Bhajias):
125ml Chickpea flour
250ml Golden Cloud flour
2 tsp baking powder
2 medium sized onions, chopped
250ml spinach, chopped
½ tsp turmeric
1 tsp green chilies, chopped
1 tsp cumin powder
1 tsp coriander powder
1 tsp chili powder
1 tsp ginger paste
3 tbsp fresh coriander, finely chopped
150-200ml cold water
Salt to taste
Sunflower Oil for deep frying
Green Chutney:
2 cups fresh coriander
1 cup fresh mint
1-2 green chillies
2 whole garlic
1 tbsp roasted peanuts
1 tbsp chopped ginger
1 lemon
2 tbsp sugar
1 tsp cumin powder
1/3 cup water
Salt to taste
Method:
For masala chai powder:
Grind all the ingredients into a fine powder
For masala chai:
In a heavy based pot, add masala chai powder blend, water, tea leaves (or bags) and ginger. Boil on high heat for 5 minutes.
Lower the heat and add evaporated milk, condensed milk, milk and sugar.
Brew for 15 minutes on low to medium heat. Bring to a heavy boil in last 3-4 minutes. Strain and serve
For chilli bites:
Sift together the chickpea flour and Golden Cloud Flour. Add the baking powder, salt, onions, spinach, turmeric, chilies, cumin powder, coriander powder, chili powder, ginger paste, fresh coriander and mix gently.
Heat a heavy based pot with oil for deep frying.
Add water to the flour mixture until a thick batter is formed. Gently spoon mixture into oil and deep fry till golden and cooked through.
Transfer onto paper towel to drain excess oil.
For the green chutney:
Combine all the ingredients in a blender and blend until smooth.
