Good Hope Soy Sweet Potato Shepards Pie

Ingredients:

For the topping
600g orange sweet potatoes, peeled and chopped
¼ cup Good Hope soy milk
Salt and pepper to taste

For the filling
1 onion, chopped
500g plant based mince
150g mushrooms, sliced
2 tbsp tomato paste
2 cloves garlic, chopped
1 tbsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
2 tsp flour
½ cup veg stock
½ cup Good Hope soy milk
1 cup frozen peas

Method:

Preheat the oven to 180C.
Place the sweet potatoes in a microwave safe bowl and microwave on high until with a quarter cup of water until soft. Drain the water and return the sweet potatoes to the pot. Pour in the Good Hope soy milk and mash until smooth. Season with salt and pepper and set aside.

Chefs Tip: This recipe can be made vegetarian by substituting the chicken stock for vegetable stock, and the chicken for mushrooms or tofu.
