Green Goddess Cauliflower Salad

Vibrant, fresh, and packed with herby goodness

 

Ingredients:

For the Salad:

  • 1 medium head of cauliflower, cut into small florets
  • 1 cup sliced cucumber
  • ¼ small red onion, thinly sliced
  • ½ cup fresh herbs (parsley, basil, or mint leaves)
  • 2 Tbsp toasted pumpkin seeds or almonds (for crunch)

For the Green Goddess Dressing:

  • 1 ripe avocado
  • ½ cup Greek yoghurt or sour cream
  • 1 small garlic clove
  • Juice of 1 lemon
  • 2 Tbsp olive oil
  • 2 Tbsp water (to thin, if needed)
  • ½ cup mixed fresh herbs (parsley, chives, basil, dill, or coriander)
  • Salt and pepper, to taste

How To Make Green Goddess Cauliflower Salad

  1. Bring a pot of salted water to the boil.
  2. Add the cauliflower florets and cook for 2–3 minutes until just tender but still crisp.
  3. Drain and cool under cold water to stop the cooking.
  4. In a blender or food processor, combine avocado, yoghurt, garlic, lemon juice, olive oil, water, herbs, salt, and pepper.
  5. Blend until smooth and creamy.
  6. Adjust seasoning to taste.
  7. In a large bowl, combine cauliflower, cucumber, and red onion.
  8. Pour over the dressing and toss gently to coat.
  9. Transfer to a serving bowl, scatter with fresh herbs and toasted pumpkin seeds, and drizzle with a little extra olive oil if desired.
