Green Goddess Cauliflower Salad
Vibrant, fresh, and packed with herby goodness
Ingredients:
For the Salad:
- 1 medium head of cauliflower, cut into small florets
- 1 cup sliced cucumber
- ¼ small red onion, thinly sliced
- ½ cup fresh herbs (parsley, basil, or mint leaves)
- 2 Tbsp toasted pumpkin seeds or almonds (for crunch)
For the Green Goddess Dressing:
- 1 ripe avocado
- ½ cup Greek yoghurt or sour cream
- 1 small garlic clove
- Juice of 1 lemon
- 2 Tbsp olive oil
- 2 Tbsp water (to thin, if needed)
- ½ cup mixed fresh herbs (parsley, chives, basil, dill, or coriander)
- Salt and pepper, to taste
How To Make Green Goddess Cauliflower Salad
- Bring a pot of salted water to the boil.
- Add the cauliflower florets and cook for 2–3 minutes until just tender but still crisp.
- Drain and cool under cold water to stop the cooking.
- In a blender or food processor, combine avocado, yoghurt, garlic, lemon juice, olive oil, water, herbs, salt, and pepper.
- Blend until smooth and creamy.
- Adjust seasoning to taste.
- In a large bowl, combine cauliflower, cucumber, and red onion.
- Pour over the dressing and toss gently to coat.
- Transfer to a serving bowl, scatter with fresh herbs and toasted pumpkin seeds, and drizzle with a little extra olive oil if desired.
