Grilled BBQ Chicken

Packed with smoky, tangy flavour and comes together with minimal fuss!

Preparation time: 20 minutes
Cooking time: 40 – 50 minutes

Ingredients:

For the Chicken:

  • 8 bone-in, skin-on chicken pieces (thighs or drumsticks)

For the Marinade:

  • 1/4 cup olive oil
  • 3 Tbsp apple cider vinegar
  • 3 Tbsp Worcestershire sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp Dijon mustard
  • 2 tsp liquid smoke, optional
  • 2 Tbsp brown sugar
  • 1 Tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper, optional
  • 1/2 cup BBQ sauce

How To Make Grilled BBQ Chicken

  1. Whisk all ingredients except the BBQ sauce until smooth.
  2. Stir in the BBQ sauce at the end.
  3. Place chicken in a large resealable bag or container and coat with marinade.
  4. Seal and refrigerate for at least 2 hours, preferably overnight.
  5. Remove chicken from marinade and let excess drip off.
  6. Sear chicken over direct heat for 3–4 minutes per side to get a good char.
  7. Move to indirect heat, cover the grill, and cook for 20–25 minutes, turning occasionally.
  8. In the last 8–10 minutes, baste with fresh BBQ sauce and flip occasionally, allowing sauce to glaze without burning.
