Grilled Halloumi and Butternut Wraps with Herbed Yoghurt Sauce

Serves: 4
Preparation time: 15 – 20 minutes
Cooking time: 25 – 30 minutes

Ingredients:

 

  • 200g halloumi cheese, sliced
  • 500g butternut, peeled & cubed 
  • 2 Tbsp olive oil
  • 1 tsp smoked paprika 
  • 1 tsp ground cumin
  • 1 tsp garlic powder 
  • 4 large tortilla wraps 
  • 1 red onion, thinly sliced 
  • Handful of baby spinach or rocket, to serve

For the herbed yoghurt sauce:

  • 1 cup Clover yoghurt 
  • 1 tsp lemon juice & zest 
  • 1 clove garlic, minced 
  • ¼ cup parsley, chopped
  • Salt & pepper to taste 
  • Olive oil, to serve

How To Make  Wraps with Herbed Yoghurt Sauce

  1. Preheat oven to 180°C, place butternut, olive oil, spices and seasoning into a large bowl and mix until well combined. Place onto a greased baking sheet and roast for 20 – 25 minutes, or until golden brown.
  2. Heat a non-stick pan to medium heat and grill the halloumi slices for 2 – 3 minutes on each side golden brown and crispy, remove from the pan and set aside.
  3. For the herbed yoghurt sauce, add all ingredients into a bowl and mix until well combined, then season to taste with salt & pepper.
  4. To assemble the wraps, spread a generous amount of the herbed yoghurt sauce on each wrap, top with a handful of spinach or rocket and a few slices of red onion. Top with grilled halloumi and roasted butter and serve immediately.
