
Grilled Halloumi and Butternut Wraps with Herbed Yoghurt Sauce

Cooking time: 25 – 30 minutes
Ingredients:
- 200g halloumi cheese, sliced
- 500g butternut, peeled & cubed
- 2 Tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 4 large tortilla wraps
- 1 red onion, thinly sliced
- Handful of baby spinach or rocket, to serve
For the herbed yoghurt sauce:
- 1 cup Clover yoghurt
- 1 tsp lemon juice & zest
- 1 clove garlic, minced
- ¼ cup parsley, chopped
- Salt & pepper to taste
- Olive oil, to serve
How To Make Wraps with Herbed Yoghurt Sauce
- Preheat oven to 180°C, place butternut, olive oil, spices and seasoning into a large bowl and mix until well combined. Place onto a greased baking sheet and roast for 20 – 25 minutes, or until golden brown.
- Heat a non-stick pan to medium heat and grill the halloumi slices for 2 – 3 minutes on each side golden brown and crispy, remove from the pan and set aside.
- For the herbed yoghurt sauce, add all ingredients into a bowl and mix until well combined, then season to taste with salt & pepper.
- To assemble the wraps, spread a generous amount of the herbed yoghurt sauce on each wrap, top with a handful of spinach or rocket and a few slices of red onion. Top with grilled halloumi and roasted butter and serve immediately.
