
Kale & Spinach Mash with Balsamic Roasted Mushroom
It’s stone fruit season and we have decided to dedicate a whole culinary hotline to these sweet and juicy fruit!

Preparation time: 15 minutes
Cooking time: 30 – 40 minutes
Ingredients:
- 250g mushrooms
- 1 Tbsp olive oil
- 2 – 3 Tbsp balsamic vinegar
- ½ Tbsp honey
- 1 Tbsp soy sauce
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
For the spinach & kale mash
- 4 large potatoes, peeled & cubed
- 1 cup kale, rinsed & chopped
- 2 cups spinach, rinsed & chopped
- ½ cup Clover Full Cream Milk
- 1 tsp garlic powder
- 1 tsp dried mixed herbs
- Salt & pepper, to taste
How To Make Kale & Spinach Mash with Balsamic Roasted Mushroom
- Preheat oven to 180°C.
- Add olive oil, balsamic vinegar, honey, soy sauce, garlic into a bowl mix until well combed add in mushrooms & thyme sprigs, toss until the mushrooms are coated then transfer the mushrooms and the dressing into a baking tray, place into the oven and roast for 35 minutes.
- Place the potatoes into a large pot of salted water, bring to a boil and allow the potatoes to boil for about 8 minutes until tender, meanwhile in a separate pan, heat some olive oil and sauté spinach and kale for about 1 – 2 minutes, once the potatoes are tender, drain them and return to the same pot, add in milk and butter, then mash the potatoes until smooth, lastly stir in spinach and kale. Season to taste with salt & pepper.
- Spoon the kale & spinach mash into a bowl, top with roasted balsamic mushrooms and serve immediately.
