Grilled Steak, Potato, and Mushroom Kebabs

Ingredients:

  • 500g steak (sirloin, ribeye, or rump), cut into cubes
  • 3 medium baby potatoes, parboiled and halved
  • 200g button mushrooms, cleaned and stems trimmed
  • 1 red bell pepper, cut into chunks
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or rosemary
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of half a lemon
  • Fresh parsley or coriander, chopped (for garnish)
  • Skewers (metal or soaked wooden)

How To Make Grilled Steak, Potato, and Mushroom Kebabs

  1. Place baby potatoes in water and parboil for about 8–10 minutes until just tender but not falling apart.
  2. Drain and set aside.
  3. In a bowl, combine olive oil, minced garlic, smoked paprika, thyme (or rosemary), salt, pepper, and lemon juice.
  4. Toss the steak cubes, parboiled potatoes, mushrooms, and red pepper chunks in the marinade.
  5. Let it sit for at least 30 minutes to absorb the flavours.
  6. Thread the steak, potatoes, mushrooms, and peppers alternately onto the skewers.
  7. Heat the grill or grill pan to medium-high and oil the grates.
  8. Place the skewers on the grill and cook for about 10–15 minutes, turning every 3–4 minutes, until steak is cooked to your desired doneness and vegetables are nicely charred.
  9. Remove from grill, garnish with chopped fresh herbs, and serve hot with you favourite sauce on the side.
