How To Make Grilled Steak, Potato, and Mushroom Kebabs
- Place baby potatoes in water and parboil for about 8–10 minutes until just tender but not falling apart.
- Drain and set aside.
- In a bowl, combine olive oil, minced garlic, smoked paprika, thyme (or rosemary), salt, pepper, and lemon juice.
- Toss the steak cubes, parboiled potatoes, mushrooms, and red pepper chunks in the marinade.
- Let it sit for at least 30 minutes to absorb the flavours.
- Thread the steak, potatoes, mushrooms, and peppers alternately onto the skewers.
- Heat the grill or grill pan to medium-high and oil the grates.
- Place the skewers on the grill and cook for about 10–15 minutes, turning every 3–4 minutes, until steak is cooked to your desired doneness and vegetables are nicely charred.
- Remove from grill, garnish with chopped fresh herbs, and serve hot with you favourite sauce on the side.
