Homemade Coffee Cookies

The perfect homemade treat!

Makes: 24 cookies
Preparation time: 20 minutes
Cooking time: 12 – 15 minutes

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 Tbsp instant coffee granules (or espresso powder)
  • 2 ½ cups cake flour
  • ½ tsp bicarbonate of soda
  • ½ tsp salt

Optional:

  • 1 cup dark or semi-sweet chocolate chips or chopped nuts

How To Make Homemade
Coffee Cookies

  1. Preheat the oven to 180°C.
  2. Line a baking tray with baking paper.
  3. In a small bowl, dissolve the instant coffee granules in 1 tablespoon of hot water.
  4. Set aside to cool.
  5. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2–3 minutes).
  6. Beat in the eggs, one at a time, then mix in the vanilla extract and dissolved coffee.
  7. In a separate bowl, whisk together the flour, bicarbonate of soda, and salt.
  8. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  9. Fold in chocolate chips or nuts if using.
  10. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 – 3cm apart.
  11. Bake for 10–12 minutes, or until the edges are lightly golden.
  12. The centers will look soft but will set as they cool.
  13. Let the cookies rest on the tray for 5 minutes before transferring them to a wire rack to cool completely.
