Homemade Coffee Cookies
The perfect homemade treat!
Makes: 24 cookies
Preparation time: 20 minutes
Cooking time: 12 – 15 minutes
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 Tbsp instant coffee granules (or espresso powder)
- 2 ½ cups cake flour
- ½ tsp bicarbonate of soda
- ½ tsp salt
Optional:
- 1 cup dark or semi-sweet chocolate chips or chopped nuts
How To Make Homemade
Coffee Cookies
- Preheat the oven to 180°C.
- Line a baking tray with baking paper.
- In a small bowl, dissolve the instant coffee granules in 1 tablespoon of hot water.
- Set aside to cool.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2–3 minutes).
- Beat in the eggs, one at a time, then mix in the vanilla extract and dissolved coffee.
- In a separate bowl, whisk together the flour, bicarbonate of soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in chocolate chips or nuts if using.
- Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 – 3cm apart.
- Bake for 10–12 minutes, or until the edges are lightly golden.
- The centers will look soft but will set as they cool.
- Let the cookies rest on the tray for 5 minutes before transferring them to a wire rack to cool completely.
