Hot Honey Chicken and HoneyGold® Skewers

A tantalizing combination of heat, sweetness, and citrusy goodness!

Serves: 4-6
Time: 1 hour

Ingredients:

  • 700g Chicken thighs
  • 3 garlic cloves, minced
  • 1/3 cup honey
  • 3 tbsp olive oil
  • 4 tbsp soy sauce
  • 3 tbsp sriracha
  • 1 tbsp ginger, minced
  • 2 tsp smoked paprika
  • 2-3 HoneyGold® grapefruits
  • 180g Mixed leaf salad
  • 1 medium cucumber, ribboned
  • Bamboo skewers, soaked

How To Make:

  1. Prepare a braai stand or grill pan.
  2. Cut each piece of chicken into four or half depending on the size. You want medium to large pieces.
  3. Place the chicken in a bowl, add the honey, olive oil, sriracha, ginger, paprika, salt and pepper.
  4. Zest a HoneyGold ® and add the zest to the chicken mixture.
  5. Toss to combine and allow the chicken to marinate for 20 minutes.
  6. In the meantime, cut the skins off the HoneyGold ® and then cut into medium sized pieces.
  7. Thread a piece of chicken onto a skewer, followed by a HoneyGold ® and repeat until have used up all the chicken.
  8. Grease the grill lightly then place the skewers on the grill.
  9. Grill on each side until cooked through. Brushing with the leftover marinade as they cook.
  10. Place salad leaves on a serving plate, topped with the cucumber ribbons.
  11. Once the skewers are ready, place on the salad and serve immediately.
