Hulletts Bobotie

Huletts is helping all home bakers and cooks spread kindness this heritage month with Huletts sugar. Our sprinkle of kindness today comes in the form of a classic south African dish, the bobotie. Bobotie is a mildly curried and spicy mince casserole with an egg custard topping that is traditionally served with fragrant yellow rice.

Ingredients:

1 tsp Oil
1 Chopped Onion
500g Beef Mince (or Lamb)
1 Clove Garlic
1 White Bread Slice
250ml Milk
2 Eggs
¼ Cup Seedless Raisins (Optional: Soaked in Brandy)
¼ Cup Almonds, crushed and toasted
1 Tbsp White Wine Vinegar
2 tsp Huletts Brown Sugar
1 tsp Ground Turmeric
½ tsp Ground Cumin
1 tsp Salt
1 Tbsp Curry Powder (mild)
¼ tsp Ground Black Pepper
3 Bay Leaves

Method:

Soak the bread in a bit of the milk.
Sauté onions in the oil then add the spices and the minced meat.
Cook until the mince is browned, and the spices are toasted.
Add the vinegar, sugar, apricot jam, and raisins.
Cook for about 10 minutes, breaking up the mince.
Add the almonds and the soaked bread slice.
Season well.
Place in a greased casserole dish, and press down so the mince is flat at the top.
Beat the egg and remaining milk, and add a bit of seasoning to the egg mixture.
Pour over the mince.
Place the bay leaves on top.
Bake at 170°C for 30 minutes, the custard (egg and milk mixture) must be golden in colour and set.
Serve with yellow rice (rice cooked with turmeric). Adding raisins to the rice is worth trying!
