Island Tribe Sticky Orange Glazed Chicken

Spring is in the air and as we gear up for summer, fresh, tasty dishes are at the top of our list for warm summer days! The beauty of oranges?  There are so many different ways to enjoy them in a variety of dishes. We’re showing you how to get that perfect citrus flavour in your chicken tray bake

Serves: 4-5
Time: 15 minutes


6-8 chicken drumstick and thigh pieces
Salt and pepper to taste
2 tbsp white vinegar
3 tbsp honey
1 tbsp grated ginger
1 red chilli, chopped
1 tbsp Chinese 5 spice powder
Juice and zest of 1 blood orange/orange

Salad for serving
Grapefruit segments


In a saucepan, boil together the vinegar honey, chopped ginger, red chilli, Chinese 5 spice and the juice and zest of the orange or blood orange. Season the chicken pieces on a greased baking tray with salt and pepper. Pour the sauce over chicken and bake in oven at 180 degrees for 30-35 minutes until chicken is tender. Serve with salad and grapefruit segments
