Jalapeño Chutney Chicken Quesadillas
Some dishes are made for quick moments of joy, and this one delivers big flavour with very little effort!
Ingredients:
- 2 cups cooked shredded chicken (rotisserie works well)
- 1 small onion, sliced
- 1 red or green pepper, sliced
- 1 tsp garlic powder or 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 cup grated mozzarella or cheddar
- 3–4 tbsp Mrs Balls Jalapeno Chutney
- Salt and pepper to taste
- 4 large tortillas
- 1–2 tbsp oil or butter for frying
- Extra chutney for dipping
- Optional: sliced jalapenos, coriander, spring onion
How To Make Jalapeño Chutney Chicken Quesadillas
- Heat the oil in a pan.
- Add onions and peppers, sauté until softened and slightly caramelised.
- Add garlic (or garlic powder), cumin, smoked paprika and stir until fragrant.
- Add shredded chicken and season with salt and pepper.
- Stir in Mrs Balls Jalapeno Chutney and cook for 2 minutes to coat and warm.
- Heat a clean non-stick pan.
- Add butter or a drizzle of oil.
- Place a tortilla in the pan, sprinkle cheese on half of it.
- Add a generous layer of the chicken filling.
- Add more cheese if needed.
- Fold the tortilla and toast both sides until golden and crispy.
- Slice into wedges and garnish with coriander or spring onions.
- Serve with extra Mrs Balls Jalapeno Chutney.
