Jungle Granola Crusted Chicken Caesar Salad
Using a pantry staple like Jungle Granola you can upgrade your chicken salad with a healthier crunch!

Ingredients:
4 chicken breasts
2 eggs
1 cup Golden Cloud Flour
1 cup panko crumbs
½ cup Jungle Muesli (Granola)
6 bacon rashers
4- 6 cups romaine lettuce, chopped to bite size pieces
1 avocado, cut into cubes
4 eggs, medium-hard boiled eggs
½ cup parmesan, grated
Anchovy fillets, optional
Creamy Caesar dressing
Method:
Prepare the Airfryer basket.
Season the chicken with salt and pepper.
Place the eggs and flour in separate bowls.
Combine the panko crumbs and Jungle Muesli Granola in one bowl.
Coat the chicken in the flour, dust off and then place it in the egg and followed by panko granola mix. Spray the chicken with cooking spray and place the crumbed chicken in the Airfryer basket. Cook for 15 minutes. Move the chicken to one side of the Airfryer and add the bacon rashers. Cook for a further 15 minutes until the chicken and bacon are crisp.
In a large bowl add the lettuce, avocado, eggs and anchovies. Cut the chicken into strips and the bacon into bite size pieces and add them to the salad. Sprinkle on the parmesan and dress the salad, serve immediately.
Chefs Tip: The panko crumbs and granola give this chicken a healthier crunch and it’s a great recipe to share with the whole family.
