KOO Beef Chilli
Getting your 4-5 servings of fruits and veggies each day is easier said than done. A lot of people struggle because they either don’t have enough time for food prep, are contending with fussy eaters or face other issues.

Ingredients:
500g Beef Mince
1 Onion, finely diced
1 Cup Beef Stock
1 KOO Black Beans, drained & rinsed
1 KOO Red Kidney Beans, drained & rinsed
1 tin Chopped & Peeled Tomatoes
1 Tbsp Taco Seasoning
1 tsp Ground Cumin
1 tsp Chilli Powder
40g Dark Chocolate
Salt and Pepper, to taste
Corn Salsa:
1 KOO Whole Kernel Corn, drained
½ Red Onion, finely diced
2 Tbsp Chopped Pickled Jalapenos
Handful fresh Coriander, finely chopped
Steamed rice, to serve with some KOO tinned peas folded through.
Method:
To make the beef chilli, bring a saucepot to a medium heat, add 1 Tbsp of olive oil and the onion and allow to sauté for 3-4 minutes. Add the beef mince and brown off for 8-10 minutes. Add the taco seasoning and chilli powder. Then add the tinned tomatoes and beef stock and allow to reduce and cook down for 15-20 minutes. Add the beans and stir through. Season the chilli with salt and pepper and add the dark chocolate. Mix through and serve with steamed rice and corn salsa. To make the salsa, combine all the ingredients into a mixing bowl and toss.
Chefs Tip:
- If you don’t have taco seasoning, you can always make up your own, by combining ground cumin, coriander, smoked paprika, chilli and salt
- If you want to add a extra kick to your chilli, add come freshly chopped chillis in at the end before serving
