KOO Beetroot & Brie Bites

KOO Beetroot can be enjoyed in many different ways and it is always the perfect addition to add colour to any dish. Not only does it taste great, it’s also packed with tons of wholesome benefits that are key for your overall wellbeing.

You can also replace the grated beetroot with the sliced one, just make sure to chop it up finely.
Add some chilli to the beetroot to add a spicy note to the pastries.

Serves: 4-6

Ingredients:

400g puff pastry, thawed
1/3 Cup Koo grated beetroot
100g brie cheese, cubed
3-4 thyme sprigs
4 Tbsp basil pesto
balsamic dressing, to serve
salt and pepper, to taste

Method:

Preheat the oven to 180°C.
Line a muffin pan with a non-stick cooking spray.
Roll out the puff pastry on a floured surface and then cut into square large enough to fit into the muffin tray. Press the pastry down into the muffin tray, add 2-3 blocks of cheese into the pastry, a tablespoon of beetroot and sprinkle some thyme leaves over the beetroot, season with salt and pepper.
Place the pastries into the oven to bake for 20-25 minutes, until golden brown and crisp.
Before serving, dollop each pastry with some basil pesto and a drizzle of balsamic glaze.

Chefs Tip:
