
Lamb Burger with Caramelized Onion and Feta Mousse

Serves: 4
Ingredients:
- 500g Lamb mince
- 4 Hamburger buns, toasted
- 2 Red onions, finely sliced
- 1 Medium aubergine, diced
- 2 Discs Clover feta: mixed herb
- ¼ -1/3 Cup Clover fresh milk
- 2 Tbsp Olive oil
- Sprig of thyme
- Salt and pepper, to taste
How To Make Lamb Burger with Caramelized Onion and Feta Mousse
- To make the feta mousse, place the feta and ¼ cup of milk into the blender and blend until smooth. Add more milk if needed. Set aside.
- To prepare the patties, divide the mince into 4 equal patties and place into the fridge for at least 30 minutes to allow the patties to firm up.
- Add the onions and 1 tablespoon of olive oil to a medium heated saucepan. Allow to sauté for 3-4 minutes, then add the aubergine and thyme, cook for 10-15 minutes.
- Once the aubergine has cooked through and turned a golden colour remove from the heat and set aside.
- Cook the patties according to your liking either over the grill or in a pan.
- Add the patties to the buns, top onion mixture and then with the feta mousse. Serve sides our your choice.
