Lattice for Potstickers
This delicate web not only looks impressive but also adds a delightful crunch and keeps your dumplings beautifully together.
Ingredients:
- 1 cup all-purpose flour (for dusting and rolling)
- 1 batch of prepared potstickers (filled and sealed)
- ½ cup water
- 2 tablespoons cornflour (cornstarch works too)
- 2–3 tablespoons vegetable oil or sesame oil
- A few drops of black food colouring
- Non-stick skillet with lid
- Small spoon or brush for drizzling
How To Make Lattice for Potstickers
- Prepare the cornflour mixture:
- In a small bowl, mix ½ cup water with 2 tablespoons cornflour until smooth.
- Divide into two portions.
- Leave one portion plain (this will be the white side).
- Add a few drops of black food colouring to the second portion and mix until evenly coloured.
- Arrange the potstickers:
- Heat 2–3 tablespoons of oil in a non-stick skillet over medium heat.
- Place the potstickers in the pan, pleated side up, leaving small gaps between them.
- Create the Yin Yang lattice:
- Carefully pour the white cornflour mixture around one half of the potstickers.
- Pour the black cornflour mixture around the other half.
- The two mixtures should meet in the middle, creating a Yin Yang effect.
- Do not pour directly on top of the dumplings — the lattice forms underneath.
- Cook and crisp the lattice:
- Cover the skillet with a lid and cook for 5–7 minutes, until the liquid sets and becomes crispy.
- The lattice should now hold the dumplings together while showing the black-and-white contrast.
- Lift and serve:
- Carefully slide a spatula under the lattice and lift the potstickers with the Yin Yang pattern intact.
- Serve immediately for maximum crispiness and visual impact.
