Loaded Chakalaka & Beans Baked Potato

There’s nothing quite like a baked potato, now imagine a loaded one!

Preparation time: 15 minutes
Cooking time: 45 minutes

Ingredients:

  • 2 large potatoes, parboiled
  • 2 Tbsp olive oil
  • 1 Tbsp salt flakes
  • 1 Tbsp butter
  • 1 cup KOO Chakalaka
  • 1 cup KOO Baked Beans
  • 1 cup cheddar or mozzarella cheese, grated
  • 1 cup any leftover cooked meat, roughly chopped

To serve:

  • sour cream or mayonnaise
  • spring onion or chopped chives
  • Salt & pepper to taste

How To Make Loaded Chakalaka & Beans Baked Potato

  1. Preheat the oven to 200°C.
  2. Place the parboiled potatoes on a lined baking tray, drizzle with olive oil and season with a
    generous amount of salt.
  3. Bake for about 15 – 20 minutes until the potato is crispy on the outside.
  4. Meanwhile heat the chakalaka and baked beans in a saucepan, add in any leftover meat, mix and allow to cook for a few minutes until heated through, then remove from the heat.
  5. Cut open the potatoes, fluff the inside with a fork, and mix in a little butter, spoon over the chakalaka and bean mixture, top with cheese and place into the oven for a few minutes until is cheese is melted.
  6. Remove from the oven, top with sour cream and chopped chives.
  7. Serve immediately and enjoy!
