Loaded Chakalaka & Beans Baked Potato
There’s nothing quite like a baked potato, now imagine a loaded one!

Cooking time: 45 minutes
Ingredients:
- 2 large potatoes, parboiled
- 2 Tbsp olive oil
- 1 Tbsp salt flakes
- 1 Tbsp butter
- 1 cup KOO Chakalaka
- 1 cup KOO Baked Beans
- 1 cup cheddar or mozzarella cheese, grated
- 1 cup any leftover cooked meat, roughly chopped
To serve:
- sour cream or mayonnaise
- spring onion or chopped chives
- Salt & pepper to taste
How To Make Loaded Chakalaka & Beans Baked Potato
- Preheat the oven to 200°C.
- Place the parboiled potatoes on a lined baking tray, drizzle with olive oil and season with a
generous amount of salt. - Bake for about 15 – 20 minutes until the potato is crispy on the outside.
- Meanwhile heat the chakalaka and baked beans in a saucepan, add in any leftover meat, mix and allow to cook for a few minutes until heated through, then remove from the heat.
- Cut open the potatoes, fluff the inside with a fork, and mix in a little butter, spoon over the chakalaka and bean mixture, top with cheese and place into the oven for a few minutes until is cheese is melted.
- Remove from the oven, top with sour cream and chopped chives.
- Serve immediately and enjoy!
