Loaded Potato Soup

Would you call this a hot mess or sucess?

 

Ingredients:

  • 4 large potatoes, cubed and boiled
  • 6 strips bacon, chopped
  • 2 Tbsp butter
  • 1 onion, diced
  • 2 tsp garlic, chopped
    1/4 cup of flour
  • 1 cup milk
  • 1 cup cream
  • 1 ½ cups chicken stock
  • Pinch cayenne pepper
  • Black pepper, to taste
  • 1 ½ cups cheddar cheese, grated

To serve:

  • Chives, chopped
  • Bacon bits

How To Make Loaded Potato Soup

  1. In a large pot, cook bacon over medium heat until crispy.
  2. Remove with a slotted spoon and set aside.
  3. Add butter and onion, sauteing for about 5 minutes or until your onions soften.
  4. Throw in your garlic and cook until fragrant.
  5. Add in your flour and stir for about 1 minute.
  6. Slowly whisk in your heavy cream and milk, working in batches (about a 1/3 at a time).
  7. Repeat with your chicken stock.
  8. Season with your salt, pepper, and cayenne.
  9. Stir to combine.
  10. Add in your potatoes and bring to boil.
  11. Boil until fork tender, for about 15 minutes.
  12. Reduce heat to medium-low.
  13. Add in your cheddar cheese and bacon (leaving aside a few T of each for topping), stir until it melted.
  14. With a potato masher, immersion blender or whatever you have on hand, mash your potatoes until desired consistency.
  15. Serve immediately and top with more cheese, sour cream, bacon, and green onions.
