Maize Meal & Pilchards Croquettes

  • 2 cups White Star Super Maize Meal
  • ¼ spring onion, chopped​
  • 1 tin Lucky Star Pilchards in Hot Chilli OR Tomato Sauce
  • 1 cup cheddar cheese, grated
  • 175g Cerebos Salt & Pepper Combi Pack
  • 1 cup flour
  • 3 eggs, beaten
  • 1 cup seasoned breadcrumbs
  • Oil for frying
  • To serve:
  • sweet chili sauce
  • mayonnaise
  • fresh parsley, chopped

How To Make Maize Meal & Pilchards Croquettes

  1. Cook white star maize meal according packet instructions, allow it to cool down completely.
  2. Add cooled maize meal, pilchards, spring onion, cheese and seasoning into a large bowl and mix until well combined.
  3. Scoop out ¼ cup of the mixture and roll into balls.
  4. Place into the refrigerator for 5 minutes to firm up, meanwhile heat oil over medium heat.
  5. Place each ball into flour, then into beaten egg and lastly toss in seasoned breadcrumbs, fry for 2 – 3 minutes until golden brown and crispy.
