Maize Meal & Pilchards Croquettes

Ingredients:
- 2 cups White Star Super Maize Meal
- ¼ spring onion, chopped
- 1 tin Lucky Star Pilchards in Hot Chilli OR Tomato Sauce
- 1 cup cheddar cheese, grated
- 175g Cerebos Salt & Pepper Combi Pack
- 1 cup flour
- 3 eggs, beaten
- 1 cup seasoned breadcrumbs
- Oil for frying
- To serve:
- sweet chili sauce
- mayonnaise
- fresh parsley, chopped
How To Make Maize Meal & Pilchards Croquettes
- Cook white star maize meal according packet instructions, allow it to cool down completely.
- Add cooled maize meal, pilchards, spring onion, cheese and seasoning into a large bowl and mix until well combined.
- Scoop out ¼ cup of the mixture and roll into balls.
- Place into the refrigerator for 5 minutes to firm up, meanwhile heat oil over medium heat.
- Place each ball into flour, then into beaten egg and lastly toss in seasoned breadcrumbs, fry for 2 – 3 minutes until golden brown and crispy.
