“Marry Me” Chicken

They say the way to someone’s heart is through their stomach. This ‘Marry Me’ chicken and Clover cheese sauce proves it!

Ingredients:

Serves: 4
Preparation time: 15 minutes
Cooking time: 25 – 30 minutes

Chef’s Tips:

  1. You can also use boneless chicken thighs to make this dish, chicken thighs are particularly good at retaining moisture.
  2. Sear the chicken to get a nice brown crust, this adds flavour and helps to seal in the juices.

For the pastry:

  • 2 Tbsp olive oil
  • 2 chicken breasts
  • 1 Tbsp chicken spice
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 ½ tsp paprika
  • 2 Tbsp unsalted butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ½ cup sundried tomatoes
  • 2 Tbsp tomato paste
  • ½ cup chicken stock
  • 1 ½ cups fresh cream
  • 2 cups baby spinach
  • 2 cups Clover Cheese, grated

To serve:

  • fresh basil leaves
  • crispy prosciutto ribbons, optional

How To Make “Marry Me” Chicken

  1. Heat oil in a large non-stick skillet, add all the seasonings including salt & pepper into a bowl, then season the chicken on both sides, sear the chicken for 3 minutes on each side, then remove from the pan.
  2. To the same pan add butter, allow it to melt then add in onions and garlic, allow it to cook until the onions are translucent, and garlic is fragrant.
  3. Stir in tomato paste and cook for about 1 minute, add in chicken stock and allow it to reduce until the liquid is less than half, add in cream sundried tomato, spinach and cooked chicken, allow this to cook for 2 – 3 minutes, top with cheese and allow the cheese to melt.
  4. Season to taste with salt & pepper.
  5. Serve immediately with any sides of your choice and garnish with basil and crispy prosciutto ribbons.
