
“Marry Me” Chicken
They say the way to someone’s heart is through their stomach. This ‘Marry Me’ chicken and Clover cheese sauce proves it!

Serves: 4
Preparation time: 15 minutes
Cooking time: 25 – 30 minutes
Chef’s Tips:
- You can also use boneless chicken thighs to make this dish, chicken thighs are particularly good at retaining moisture.
- Sear the chicken to get a nice brown crust, this adds flavour and helps to seal in the juices.
For the pastry:
- 2 Tbsp olive oil
- 2 chicken breasts
- 1 Tbsp chicken spice
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 ½ tsp paprika
- 2 Tbsp unsalted butter
- 1 onion, chopped
- 2 cloves garlic, minced
- ½ cup sundried tomatoes
- 2 Tbsp tomato paste
- ½ cup chicken stock
- 1 ½ cups fresh cream
- 2 cups baby spinach
- 2 cups Clover Cheese, grated
To serve:
- fresh basil leaves
- crispy prosciutto ribbons, optional
How To Make “Marry Me” Chicken
- Heat oil in a large non-stick skillet, add all the seasonings including salt & pepper into a bowl, then season the chicken on both sides, sear the chicken for 3 minutes on each side, then remove from the pan.
- To the same pan add butter, allow it to melt then add in onions and garlic, allow it to cook until the onions are translucent, and garlic is fragrant.
- Stir in tomato paste and cook for about 1 minute, add in chicken stock and allow it to reduce until the liquid is less than half, add in cream sundried tomato, spinach and cooked chicken, allow this to cook for 2 – 3 minutes, top with cheese and allow the cheese to melt.
- Season to taste with salt & pepper.
- Serve immediately with any sides of your choice and garnish with basil and crispy prosciutto ribbons.
