Mediterranean Steak Bowls

  • 2x 150g Sirloin Steak
  • 3 tbsp steak rub
  • 300g Mediterranean Vine Tomatoes
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp cracked black pepper
  • 160g Pitted Green Olives with Peppers,
  • Garlic and Basil ½ medium red onion, thinly sliced
  • 1 head romaine lettuce, chopped
  • 1 small cucumber, sliced and halved
  • ½ feta cheese, crumbled
  • 1 cup hummus
  • ½ cup Greek salad dressing
  • Handful mint leaves
  • 2 limes, cut into wedges

How To Make

  1. Preheat the oven to 190C
  2. Season the steaks on both sides and set aside.
  3. Place the vine tomatoes on a baking tray, drizzle the olive oil and season with salt and pepper.
  4. Roast in the oven for 15-20 minutes, until gently charred.
  5. Heat a grill pan and grill the steaks on both sides to your preference.
  6. Place the steaks on a plate and allow to rest.
  7. Divide the hummus between two bowls, add the lettuce, cucumbers, red onions, olives and feta cheese.
  8. Add the roasted tomatoes. Slice the steaks and place in the bowl.
  9. Drizzle the salad dressing and garnish with lemon wedges and torn fresh mint leaves.
