
Mediterranean Steak Bowls

Time: 30 minutes
Ingredients:
- 2x 150g Sirloin Steak
- 3 tbsp steak rub
- 300g Mediterranean Vine Tomatoes
- 2 tbsp olive oil
- 1 tsp sea salt
- 1 tsp cracked black pepper
- 160g Pitted Green Olives with Peppers,
- Garlic and Basil ½ medium red onion, thinly sliced
- 1 head romaine lettuce, chopped
- 1 small cucumber, sliced and halved
- ½ feta cheese, crumbled
- 1 cup hummus
- ½ cup Greek salad dressing
- Handful mint leaves
- 2 limes, cut into wedges
How To Make
- Preheat the oven to 190C
- Season the steaks on both sides and set aside.
- Place the vine tomatoes on a baking tray, drizzle the olive oil and season with salt and pepper.
- Roast in the oven for 15-20 minutes, until gently charred.
- Heat a grill pan and grill the steaks on both sides to your preference.
- Place the steaks on a plate and allow to rest.
- Divide the hummus between two bowls, add the lettuce, cucumbers, red onions, olives and feta cheese.
- Add the roasted tomatoes. Slice the steaks and place in the bowl.
- Drizzle the salad dressing and garnish with lemon wedges and torn fresh mint leaves.
