Mexican Inspired Platter

Fire up your Weber and enjoy a flavourful fiesta with this Mexican-inspired platter!

Serves: 10-12

Ingredients:

  • 6-8 Jalapeno peppers, halved and seeded
  • 125g cream cheese
  • 8 strips of streaky bacon, halved
  • ½ Cup smokey BBQ sauce

How To Make Jalapeno Poppers

  1. Stuff the jalapeno peppers with the cream cheese, then wrap the popper with the bacon strip and secure it with a toothpick.
  2. Brush the poppers with some BBQ sauce and place them into the fridge to allow to marinade for 30 minutes.
  3. When the coals are medium-high heat place the poppers onto the Weber grid and allow the bacon to crisp up.
  4. Brush the poppers with the excess sauce until done.
  5. Place the poppers onto the platter.

Ingredients:

  • 20 mini tortilla wraps
  • 2 Cups Cheddar cheese, grated
  • 1 Cup Corn kernels

How To Make Quesadillas

  1. Add some cheese to 10 mini tortillas and some corn.
  2. Close off the tortilla with the remaining ones and toast them over medium heated coals on the Weber grid.
  3. Toast them until the cheese has melted and the wraps are golden brown.
  4. Cut them in half and place on the platter along with the poppers.

Ingredients:

  • 10-12 chicken wings, split into two
  • 4 Tbsp Taco spice
  • 2 Tbsp olive oil
  • 1-2 limes

How To Make Chicken Wings

  1. To prepare the wings, coat them with oil and taco spice.
  2. Grill the wings over medium-high heated coals on the Weber for 10-12 minutes until the chicken has cooked through.
  3. Squeeze some fresh lime over the wings as they come off the coals.
  4. Place the wings onto the platter and serve with nachos, salad, sour cream and guacamole.
