Microwave Tea Loaf

The perfect tea time treat! The secret ingredient is Clover Way Better’s Double Cream Plain Yoghurt making it extra fluffy!

  • 250g Cake flour
  • 1/2 Cup caster sugar
  • 100g butter, melted
  • 1/2 Cup Clover double thick yoghurt
  • 1/2 Cup fresh raspberries
  • Zest and juice of 1 lemon
  • 1 Egg
  • 1/2 tsp Baking powder
  • Pinch of salt
  • Icing sugar, to serve

How To Make Microwave Tea Loaf

1. Spray a non-stick cooking spray on the inside of a silicone loaf mould.
2. To a mixing bowl add all the wet ingredients and mix well. Then add the remaining ingredients, except for the raspberries. Mix well until combined and then fold in the raspberries.
3. Pour the batter into the loaf tin and place into the microwave and cook for 4 to 5 minutes. To check if the cake is cooked through insert a skewer. If it comes out clean the cake has cooked through.
4. Allow the cake to completely cool before dusting with icing sugar and slicing up.
5. Serve with a cup of tea or coffee of your choice.
