
Mrs Balls Chutney Chicken Bake with Savoury Rice
This Mrs. Balls Chutney Chicken Bake with Savoury Rice is a flavourful and comforting dish that perfectly balances sweet, tangy, and savoury notes.

Ingredients:
For the chutney chicken:
- 8 chicken pieces
- 1 cup Mrs Balls Original Chutney
- 1 cup mayonnaise
- 1 ½ tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 2 Tbsp chicken seasoning of your choice
- Salt & pepper
For the savoury rice:
- 2 cups cooked yellow rice
- 1 Tbsp olive oil
- 1 Tbsp salted butter
- 1 onion, chopped
- 2 cloves garlic, minced
- ½ green pepper, chopped
- ½ red pepper, chopped
- 2 carrots, peeled & chopped
- 2 Tbsp chicken stock powder
- 1 cup water
- ½ tsp cumin
- Salt & pepper to taste
- ½ cup coriander, chopped
How To Make Chicken Bake
- Preheat your oven to 180°C and grease a large baking dish with cooking spray. In a medium bowl, mix the chutney, mayonnaise, onion powder, garlic powder, paprika and chicken seasoning, mix until well combined, then pat the chicken pieces dry using paper towel, season with salt & pepper.
- Add the seasoned chicken pieces into the marinade, toss until all the chicken pieces is well coated, then transfer the marinated chicken into the prepared baking dish, spoon over any remaining marinade, cover with foil and bake for about 30 minutes, then remove the foil and bake for an additional 15 minutes, until the chicken is cooked through, and the top is golden brown.
- Heat oil and butter in a large pan, add in onions, peppers and carrots and cook for 5 minutes until vegetables are tender, add in garlic and cook for about 1 minute until fragrant, then add in cumin and stock powder give it a stir and add in water, allow this to cook until the water has reduced, turn the down the heat and stir in cooked yellow rice. Season to taste with salt & pepper, lastly stir in chopped coriander.
- Serve the chutney baked chicken with savoury and garnish with fresh coriander. Enjoy!
