
Mrs Balls Festive Phyllo Bobotie Cups

Cooking time: 40 minutes
Ingredients:
- 12 sheets phyllo pastry
- ½ cup butter, melted
- 2 slices of bread
- 1 ½ cup milk
- 2 Tbsp canola oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 bay leaves, plus extra for topping
- 2 Tbsp mild curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 500g mince
- ½ cup Mrs Balls Chutney
- 3 large eggs, beaten
To serve:
- Mrs Balls Original Chutney
How To Make Mrs Balls Festive Phyllo Bobotie Cups
- Preheat the oven 180°C and grease a 12-hole muffin tin with cooking spray.
- Soak the bread in one cup of milk. Heat oil in a skillet over medium heat, add onions, bay leaves, garlic and cook until the onions are translucent.
- Add the curry powder, cumin, and turmeric.
- Sauté for a few minutes and then add the mince and cook until browned.
- Add in Mrs Balls Original Chutney, season with salt & pepper and add in the soaked bread, give a good mix and cook for another 2 – 3 minutes.
- Place the phyllo pastry onto a clean work surface, then brush with melted butter, top with another sheet, then cut them into squares about 5cm x 5cm.
- Place the pastry squares into the greased muffin tin, spoon in the mince mixture.
- In a separate bowl whisk together the remaining milk and eggs, pour the egg mixture over the bobotie, top with bay leaves and bake for 12 – 15 minutes.
