Mrs Balls Festive Phyllo Bobotie Cups

Ingredients:

  • 12 sheets phyllo pastry
  • ½ cup butter, melted
  • 2 slices of bread
  • 1 ½ cup milk
  • 2 Tbsp canola oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 bay leaves, plus extra for topping
  • 2 Tbsp mild curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 500g mince
  • ½ cup Mrs Balls Chutney
  • 3 large eggs, beaten

To serve:

  • Mrs Balls Original Chutney

How To Make Mrs Balls Festive Phyllo Bobotie Cups

  1. Preheat the oven 180°C and grease a 12-hole muffin tin with cooking spray.
  2. Soak the bread in one cup of milk. Heat oil in a skillet over medium heat, add onions, bay leaves, garlic and cook until the onions are translucent.
  3. Add the curry powder, cumin, and turmeric.
  4. Sauté for a few minutes and then add the mince and cook until browned.
  5. Add in Mrs Balls Original Chutney, season with salt & pepper and add in the soaked bread, give a good mix and cook for another 2 – 3 minutes.
  6. Place the phyllo pastry onto a clean work surface, then brush with melted butter, top with another sheet, then cut them into squares about 5cm x 5cm.
  7. Place the pastry squares into the greased muffin tin, spoon in the mince mixture.
  8. In a separate bowl whisk together the remaining milk and eggs, pour the egg mixture over the bobotie, top with bay leaves and bake for 12 – 15 minutes.
