Nolac Gratin Dauphiniose

Serves: 3-4
Prep time: 20 minutes

Ingredients:

  • Glug of olive oil
  • 2 onions, finely sliced
  • 2 cloves garlic, thinly sliced
  • 6 medium potatoes, unpeeled, very thinly sliced (about 2-3mm)
  • 4 thyme sprigs
  • 1 bay leave
  • 1 cup Nolac Full Cream Fresh milk
  • 1 cup Lactose free cheese
  • Salt and pepper to taste

How To Make Nolac Gratin Dauphiniose

  1. Preheat oven to 180C. To a saucepan, add the milk, thyme and bay leaf and bring to a slight simmer, do not boil. Remove from heat and allow the milk to infuse until ready to use. Grease a non stick pan with a glug of olive oil. Heat over a medium heat. Gently cook onions and garlic until softened and slightly brown. Season with salt and pepper.
  2. Grease a large baking dish with oil. Place potato slices in a layer in the bottom of the dish, slightly overlapping at the edges. Place a third of the onion mixture over the top,sprinkle over some cheese and season with salt and pepper. Repeat with layers of potato and onion, until everything is used up. Pour the infused milk over.
  3. Place in oven and cook for 25 minutes, covered in foil. Remove from oven and sprinkle over the last bit of cheese Return to oven, uncovered, for 10 more minutes, or until cheese is melted and crispy.
