Nolac Sundried Tomato Pesto Chicken

Serves 2-3
Cooking time: 20 minutes

Ingredients:

For the chicken

  • 2 tbsp olive oil
  • 3-4 Chicken breast fillets
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 cloves garlic, chopped
  • Salt and pepper to taste

For the sauce:

  • 2 cloves garlic, chopped
  • 1tbsp chilli flakes
  • 1 tbsp dried oregano
    salt and pepper to taste
  • 250ml Clover Nolac Full cream fresh milk
  • 100g sundried tomato pesto
  • Handful baby spinach

How To Make Nolac Sundried Tomato Pesto Chicken

  1. In a bowl, add the chicken, paprika, oregano and garlic. Season with salt and pepper then heat olive oil in a pan. Add the chicken tenders and sear until browned on both sides.
  2. To the chicken, add the garlic, chilli flakes, oregano and sundried tomato pesto. Season with salt and pepper and cook for a few minutes, then pour in the Nolac Full Cream fresh milk. Stir in the spinach and allow the mixture to cook for a few minutes.
  3. Once slightly reduced, taste for seasoning and serve with pasta, rice or veg.
