
Nolac Sundried Tomato Pesto Chicken

Ingredients:
For the chicken
- 2 tbsp olive oil
- 3-4 Chicken breast fillets
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 cloves garlic, chopped
- Salt and pepper to taste
For the sauce:
- 2 cloves garlic, chopped
- 1tbsp chilli flakes
- 1 tbsp dried oregano
salt and pepper to taste - 250ml Clover Nolac Full cream fresh milk
- 100g sundried tomato pesto
- Handful baby spinach
How To Make Nolac Sundried Tomato Pesto Chicken
- In a bowl, add the chicken, paprika, oregano and garlic. Season with salt and pepper then heat olive oil in a pan. Add the chicken tenders and sear until browned on both sides.
- To the chicken, add the garlic, chilli flakes, oregano and sundried tomato pesto. Season with salt and pepper and cook for a few minutes, then pour in the Nolac Full Cream fresh milk. Stir in the spinach and allow the mixture to cook for a few minutes.
- Once slightly reduced, taste for seasoning and serve with pasta, rice or veg.
