
Olive Pride Chickpea & Orzo Bake
With Asian cuisine being one of the healthiest cuisines worldwide, this recipe not only features the tastes of Asia, but it also serves as a unique way to prepare a favourite.

Ingredients:
2 tbsp Olive Pride Blend
1 onion, chopped
2 cloves garlic, chopped
1 red bell pepper, chopped
1 tin chickpeas, drained
2 tsp paprika
1 tbsp dried oregano
1 tbsp dried chilli flakes
½ cup sun dried tomatoes, chopped
3 tbso tomato puree
1 tsp sugar
300g Orzo
Salt and pepper to taste
2-3 cups vegetable stock
Squeeze of fresh lemon
1 disc feta, crumbled
Fresh parsley chopped, for garnish
Method:
Preheat the oven to 180C.
Heat the Olvie pride blend in a oven friendly skillet. Add in the onion and sauté for a few minutes, then add in the chopped pepper, garlic, paprika, dried oregano, chilli flakes and chickpeas. Cook for a few minutes then add in the sun dried tomatoes, tomato puree and sugar. Stir in the orzo and season with salt and pepper then gradually add in the stock whilst stirring. Cover with foil and place into the oven to cook for 15-20 minutes, until the orzo is cooked through. Squeeze over fresh lemon, stir through the feta and garnish with parsley before serving .
Chefs Tip:Clover Olive Pride Blend is highly recommended for hot applications such as frying, grilling, stewing and baking.
It has a high smoke point, but it maintains an olive flavour to enhance the flavour of this dish.
