Olive Pride Mince Vetkoek

Crusty on the outside and soft on the inside!

Serves: 5-6
Time: 20 minutes

Ingredients:

3 1/2 cups cake flour
1t salt
1T caster sugar
1 X 10g yeast
2 1/2 cups of water
Olive Pride Blend for frying

For the mince filling
500g Beef mince
1 onion, finely chopped
½ cup Beef stock
2 Tbsp Curry powder
Salt and pepper
Fresh coriander for garnishing

Method:

To make the vetkoek, Combine the flour, salt, sugar and yeast in a large mixing bowl with enough water to form a dough, mixing well in the bowl for about 5-7 minutes. Set the dough aside to rise for about 45 minutes or until almost doubled in size.
Heat the Olive Pride for deep-frying. Divide the dough into golf ball sized balls before carefully placing in the oil to deep-fry. After about 4 minutes the dough should be golden brown and cooked in the centre. Allow them to cool

Make the mince filling by heating a glug of Olive Pride Blend in a pan. Add onions and sauté for 3-4 minutes, until golden, add the beef mince and curry powder.
Allow the meat to cook for a few minutes until browned then add in the beef stock and season with salt and pepper. Cook for a few more minutes then set aside.
Cut the vetkoek in half, stuff them with the mince filling, garnish with fresh coriander and serve.

Chefs Tip: Make sure your oil is the right temperature so your vetkoek won’t burn and is cooked throughout!
