Recipe by: Thando Manyoni
Ingredients:
2 slices of bread
1 ½ cup milk
1 large onion, finely chopped
1 ½ tbsp curry powder
1 tsp cumin
1 tsp turmeric
1 tsp mixed dried herbs
3 garlic cloves, minced
500g mince
½ cup Mrs Balls Sweet Chilli Sauce
1 tbsp tomato paste
1 lemon, juice and zest
3 large eggs, beaten
4 bay leaves
Method:
Preheat the oven 190°C and prepare an oven proof casserole.
Soak the bread in one cup of milk. Heat oil in a skillet over medium heat, add onions and cook until soft. Add the curry powder, cumin, turmeric, mixed dried herbs and garlic. Saute for 2 minutes and then add the mince and tomato paste and cook until browned. Remove the skillet from the heat and fold in the Mrs. Balls Sweet Chilli, lemon juice and zest, one egg, season with salt and pepper to taste. Squeeze the milk from the bread, reserving the milk for later. Tear the bread into small pieces and fold into mince mixture. Spread the mixture in the casserole. Strain the milk from the bread into a jug, add the remaining milk and eggs and beat until smooth. Pour this milk mixture over the mince and top with bay leaves to decorate. Bake for 40 minutes or until golden brown.
Chefs Tip: This recipe is best prepared in a cast iron skillet as it can go straight from the stove top and into the oven to bake the custard
