How To Make One Pan Skillet Enchiladas

  1. In a large skillet, cook the beef mince over medium-high heat until browned and cooked through.
  2. Add diced onion and red pepper to the skillet, allow this cook for 3-4 minutes until vegetables are softened.
  3. Add in black beans, corn kernels and pasta sauce, mix until well combined and season with salt & pepper.
  4. Gently stir in the tortilla strips, until the strips are fully coated in the sauce.
  5. Reduce the heat to low and let the mixture simmer for about 5-7 minutes, or until the tortillas are tender and have absorbed some of the sauce.
  6. Sprinkle grated cheese evenly over the top.
  7. Cover the skillet with a lid and let it sit for a few minutes until the cheese is melted and bubbly.
  8. Once the cheese has melted remove from the heat, and garnish with fresh coriander, avocado and dollop over a generous amount of sour cream or mayonnaise.
