One Pan Skillet Enchiladas
With just a few simple ingredients and a single skillet, you can whip up a satisfying meal that everyone will love!

Cooking time: 15 – 20 minutes
Ingredients:
- 500g beef mice
- 1 onion, diced
- 1 tsp paprika
- 1 red pepper, diced
- 1 tin black beans, drained and rinsed
- 1 tin corn kernels, drained
- 2 cups store-bought pasta sauce
- 1 cup cheddar cheese, grated
- 8-10 small corn or flour tortillas, cut into strips
- salt and pepper, to taste
To serve:
- coriander
- avocado
- mayonnaise or sour cream
How To Make One Pan Skillet Enchiladas
- In a large skillet, cook the beef mince over medium-high heat until browned and cooked through.
- Add diced onion and red pepper to the skillet, allow this cook for 3-4 minutes until vegetables are softened.
- Add in black beans, corn kernels and pasta sauce, mix until well combined and season with salt & pepper.
- Gently stir in the tortilla strips, until the strips are fully coated in the sauce.
- Reduce the heat to low and let the mixture simmer for about 5-7 minutes, or until the tortillas are tender and have absorbed some of the sauce.
- Sprinkle grated cheese evenly over the top.
- Cover the skillet with a lid and let it sit for a few minutes until the cheese is melted and bubbly.
- Once the cheese has melted remove from the heat, and garnish with fresh coriander, avocado and dollop over a generous amount of sour cream or mayonnaise.
