Spicy Pesto Pasta
With just a few simple ingredients that you probably already have in your pantry, you can whip up a flavourful meal in no time!

Cooking time: 15 – 20 minutes
Ingredients:
- 250g pasta of your choice
- 2 Tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 cups baby spinach
- 2 tsp chili flakes or 1 fresh red chili chopped
- ½ cup store-bought sundried tomato
- pesto
- 2 cups cheddar cheese, grated
- salt & pepper to taste
To serve:
- basil leaves
How To Make Spicy Pesto Pasta
- Start by preparing pasta according to packet instructions, then heat olive oil in a large pan.
- Add in onions and cook until the onions are translucent, add in garlic and baby spinach allow this to cook until the garlic is fragrant and spinach has wilted, then add chili flakes and sundried tomato pesto and cook for about 2 minutes, season to taste with salt & pepper.
- Add in the cooked pasta and toss in the pesto mixture until all the pasta is completely coated in the sauce, then sprinkle in cheese and mix through until the cheese has melted, serve immediately and garnish with fresh basil.
