Winter Spiced Self-Saucing Pudding with Custard Recipe
Indulgence is the best way to keep warm this winter and it doesn’t get any better than a warm Winter Spiced Self-Saucing Pudding served with smooth and creamy custard!

Ingredients:
- For the sauce;
- ¾ cup brown sugar
- 2 tbsp corn starch
- 2 cups water
- 50g butter
- 1 cinnamon stick
- 2 star anise
- For the sponge;
- 125g butter
- ½ cup brown sugar
- 1 tsp vanilla essence
- 2 eggs
- 1 ½ cup self-raising flour
- 2 tsp ground ginger
- 1 tsp ground cardamom
- ¾ cup milk
- To serve:
- 1L Parmalat Custard
How To Make Winter Spiced Self-Saucing Pudding with Custard
- Preheat the oven to 180C and prepare a baking dish.
- In a saucepan combine all the ingredients for the sauce and bring to the boil.
- Stir to dissolve the sugar.
- Remove from the heat and allow to cool.
- In the meantime, cream together the butter and brown sugar for the sponge until light and fluffly.
- Add the vanilla essence nd eggs and whish to combine
In separate bowl combine the flour and ground spices. - Fold in the dry ingredients and the milk alternately into the butter mixture until combined.
- Remove the cinnamon and star anise from the cooled sauce. Pour the sauce into the baking dish.
- Spoon the batter over the sauce and bake for 35-40 minutes or until the pudding springs back when touched
- Serve the pudding with custard.
