Pear & Brie Cheese Pastry Squares Indulge in this gourmet delight!Recipe by Shawn Godfrey Ingredients:Serves: 8500g phyllo pastry250g brie cheese3 ripened pears2 Tbsp double cream yoghurt4 large eggs10g fresh thyme3 Tbsp honey50g pecans, chopped & toastedSalt & pepper for seasoning How To Make Pear & Brie Cheese Pastry SquaresFold the phyllo pastry in 3 layers thick into a concertina shape as shown on the video. Stack into your baking dish.Thinly slice the pear and brie cheese stacking this into the folds of the pastry in your baking dish.Drizzle with olive oil.Whisk the eggs and yoghurt and then pour over the dish.Season with salt and pepper and add the desalted thyme.Bake at 160 degrees for 25-30 minutes or until golden brown and crispy.Drizzle with honey and top with pecan nuts.Serve immediately.
