Pickled Fries Recipe
Keep your friends closed but your pickled fries closer.

Ingredients:
- 4-6 large potatoes, peeled & cut into fries
- Oil, for frying
- Pickle:
- 2 Cups white vinegar
- 2 Cups water
- 2 Tbsp Salt
- 4-6 whole peppercorns
- ½ tsp mustard seeds
- 1 bay leaf
- 1 chilli
- 1 peeled garlic clove
- 1 Tbsp sugar
- Homemade mayonnaise:
- 1 whole roasted garlic bulb
- 500ml blended oil
- 2 egg yolks
- 2 Tbsp white wine vinegar
- 1 tsp hot English mustard
- 1 tsp lemon juice
- Handful dill, stalks removed
- Salt, to taste
How To Make Pickled Fries
- To make the pickle, add the white vinegar, water, salt, peppercorns, mustard seeds, bay leaf, chilli, garlic and sugar to a pot and bring to a light simmer.
- Stir the mixture until the sugar and salt have dissolved.
- Allow the pickle to cool for 10-15 minutes.
- Place the potato fries into a sealable jar, pour the pickle brine over the potatoes, seal with lid and allow to pickle at room temperature.
- Allow to pickle for a minimum 3 days.
- To make the homemade mayonnaise, squeeze the garlic pulp into a measuring jug, add the egg yolks, vinegar, lemon juice, dill, oil and salt.
- Using a handstick blender, blend the ingredients together until the mayonnaise has formed.
- Season with salt.
- Serve mayonnaise with fries.
- To prepare the fries, heats some oil for frying up to a medium to high heat, around 180°C.
- Remove the potatoes from pickle brine and pat them dry with some paper towel.
- Fry the potatoes until just golden and remove from them the heat and allow to cool before frying them for the second and final time before serving with the mayonnaise.
