Pistachio Lava Cake
We’re going green and gooey with an indulgent treat!
Makes: 4 small lava cakes

Cook Time: 10-12 mins
Ingredients:
- ½ cup pistachios (raw, shelled, unsalted)
- ⅓ cup all-purpose flour
- ¼ cup almond flour or all-purpose flour
- ¼ cup sugar
- 1 tsp baking powder
- Pinch of salt
- ¼ cup plant milk (oat, soy, or almond)
- ¼ cup oil
- 1 tsp vanilla extract
- ¼ tsp almond extract
For the lava centre:
- 50g white chocolate
- 1 Tbsp pistachio butter
How To Make Pistachio Lava Cake
- Preheat oven to 190°C.
- Grease 4 small ramekins or muffin cups, and optionally dust with flour.
- In a food processor or high-speed blender, pulse ½ cup pistachios into a fine meal (don’t over blend into butter).
- In a medium bowl, combine, ground pistachios, flour, sugar, baking powder, salt.
- Mix then add in milk, oil and vanilla essence or almond essence.
- Stir until just combined then fill up greased ramekins halfway with the batter, place ½ Tbsp of pistachio butter and some white chocolate into the centre, then cover with the remaining batter and bake for 12 – 15 minutes, until edges are set and centre is soft.
