Porcini Mushroom Girasolini

Ingredients:

  • 1 x 250g packets WW porcini mushroom girasolini, cooked
  • 2 T Extra virgin olive oil
  • 2 T butter
  • 2 garlic cloves, chopped finely
  • 1 clove black garlic, chopped tinely
  • 1 cup cream
  • 5 saffron threads
  • 150g shelled peas
  • 1 punnet Portabellini mushroom, torn into large pieces
  • Salt and freshly ground black pepper to taste
  • 6 slices Parma ham grilled
  • To serve:
  • Truffle oil
  • Lemon zest, zested
  • Parm Reg, grated finely

How To Make Porcini Mushroom Girasolini

  1. Heat the olive oil and butter in a frying pan.
  2. Add the garlic and cook for 1 minute.
  3. Add the cream, peas and saffron.
  4. Cook for 2 minutes.
  5. Season with salt to taste.
  6. Fry mushrooms.
  7. Cook for another minute.
  8. Stir through the girasolini.
  9. Serve with broken crispy Parma ham, zested lemon, Parm reg and truffle oil.
