Pulled Beef & Onion Sloppy Roll

Cook Time: 1.5–2 hours (or use pre-cooked pulled beef for quicker prep)

Ingredients:

For the pulled beef:

  • 500g beef brisket or chuck
  • 1 tbsp olive oil
  • 1 onion, roughly chopped
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika (optional)
  • 1 tsp ground cumin (optional)
  • 1 cup beef stock
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • Salt & pepper, to taste

For the caramelised onions:

  • 1 large onion, thinly sliced
  • 1 tbsp butter or oil
  • 1 tsp brown sugar
  • A splash of balsamic vinegar or water to deglaze

For serving:

  • Sunbake Vita-Life Seeded Rolls, toasted

Fresh & Crunchy Option:

  • Handful of rocket or baby spinach / Lightly dressed carrot & apple slaw / Crisp shredded lettuce

Melty & Cheesy Option:

  • Grated mature cheddar or mozzarella
  • Melt under the grill until bubbly
  • Add extra caramelised onion for indulgence

How To Make Pulled Beef & Onion Sloppy Roll

  1. Slow-cook the beef: Season the beef with salt and pepper.
  2. Heat olive oil in a pot.
  3. Sear beef on all sides until browned.
  4. Remove and set aside.
  5. In the same pot, sauté onions until softened.
  6. Add garlic, tomato paste, Worcestershire sauce, sugar, and beef stock.
  7. Stir to combine.
  8. Return beef to the pot, cover, and simmer on low heat for 1.5–2 hours or until tender and shreddable.
  9. Shred beef with two forks and simmer uncovered for 10 more minutes to reduce sauce.
  10. Caramelise the onions: In a pan, heat butter or oil and add sliced onion.
  11. Cook over low-medium heat until soft and golden (about 15–20 mins).
  12. Stir in brown sugar and a splash of balsamic or water to deglaze the pan.
  13. Set aside.
  14. Assemble the rolls: Layer toasted Vita-Life rolls with warm pulled beef and caramelised onions.
  15. Add your choice of Fresh & Crunchy toppings or go Melty & Cheesy by topping with grated cheese and grilling until melted.
  16. Serve warm and enjoy!
