Roasted Sweet Potato & Beetroot Salad

  • For the salad:
  • 3 sweet potatoes
  • 3 Tbsp Olive oil
  • 1 tsp dried thyme
  • Salt and pepper
  • 60g Baby rocket
  • 2 Cups KOO Slice beetroot
  • For the dressing:
  • ½ cup double thick plain yoghurt
  • ½ cup mayonnaise
  • 2 Tbsp Little Bee Honey
  • 1 Tbsp Safari Vinegar
  • 1 tsp Dijon mustard
  • 2 Tbsp chopped parsley
  • salt & pepper, to taste

How To Make Roast Sweet Potato & Beetroot Salad

  1. Pre-heat the oven to 180° C.
  2. Slice the sweet potato into discs, drizzle with olive oil and season with salt, pepper, and thyme.
  3. Place the sweet potatoes onto a baking tray and roast in the oven for 15 minutes.
  4. While the potatoes are roasting add all the ingredients for the dressing into a bowl and mix until well combined.
  5. To assemble the salad, place the roasted sweet potatoes on a serving dish, scatter with some rocket leaves followed by KOO beetroot, dollop a generous amount of dressing on the salad and serve immediately. Enjoy!
