Roasted Sweet Potato & Beetroot Salad

Ingredients:
- For the salad:
- 3 sweet potatoes
- 3 Tbsp Olive oil
- 1 tsp dried thyme
- Salt and pepper
- 60g Baby rocket
- 2 Cups KOO Slice beetroot
- For the dressing:
- ½ cup double thick plain yoghurt
- ½ cup mayonnaise
- 2 Tbsp Little Bee Honey
- 1 Tbsp Safari Vinegar
- 1 tsp Dijon mustard
- 2 Tbsp chopped parsley
- salt & pepper, to taste
How To Make Roast Sweet Potato & Beetroot Salad
- Pre-heat the oven to 180° C.
- Slice the sweet potato into discs, drizzle with olive oil and season with salt, pepper, and thyme.
- Place the sweet potatoes onto a baking tray and roast in the oven for 15 minutes.
- While the potatoes are roasting add all the ingredients for the dressing into a bowl and mix until well combined.
- To assemble the salad, place the roasted sweet potatoes on a serving dish, scatter with some rocket leaves followed by KOO beetroot, dollop a generous amount of dressing on the salad and serve immediately. Enjoy!
