Roasted Tomato Soup

Winner of Season 3 of ‘Colour your Plate with KOO’, Matlhaste Mathe treats us to a soup perfect for winter!

Ingredients:

  • 1kg tomatoes
  • Olive oil
  • Seasoning
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • Pinch red chilli flakes
  • 2 cups vegetable stock
  • Handful basil leaves
  • To serve:
  • croutons
  • parmesan cheese
  • fresh cream

How To Make Roasted Tomato Soup

  1. Preheat oven to 180°C. Arrange cut tomatoes on a baking tray, drizzle with olive oil and season. Bake for 30 minutes.
  2. Sautee onion, garlic and then add in spices, deglaze with vegetable stock.
  3. Add in tomatoes and basil, then transfer to a blender and blend until smooth.
  4. Season to taste with salt & pepper.
  5. Serve with croutons, grated Parmesan, and fresh cream.
