Savoury Oat Waffles

A sweet and savoury balance!

Serves: 6-8

Ingredients:

1 cup ground oats
1 cup flour
1 tbsp sugar
1 tbsp baking powder
½ tsp baking soda
½ salt
2 eggs, separated
1 ½ cup buttermilk
4 tbsp butter, melted
2 tsp turmeric

125g streaky bacon
1 egg
1 avocado
½ cup plain yogurt
¼ cup coriander, finely chopped

Method:

Preheat the oven to 180°C and prepare a baking sheet.
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, salt and turmeric. In a separate bowl, whisk together the egg yolks, buttermilk, and melted butter. Combine the wet and dry ingredients until just incorporated. In a separate bowl, whisk the egg whites to form stiff peaks and then fold in the batter. Heat the waffle iron. Once hot, brush the melted butter on the waffle iron and spoon ½ cup if batter onto the iron. Cook until golden for 5-6 minutes. Place the bacon on the baking sheet and cook in the oven until golden and crisp. Fry the egg on a nonstick pan to your liking. Make a fresh dressing by combining the yogurt and coriander in a bowl and seasoning with salt and pepper. Serve the waffles warm topped with avo, bacon, egg and dollops of the fresh yogurt dressing.

Chefs Tip: For an extra kick, you can add finely chopped birds eye chilli to the batter or top you pancakes with some hot sauce.
