Savoury Polenta Porridge
Creamy, cheesy, and topped with crispy bacon and fresh spring onions, this dish takes porridge to a whole new level!

Serves: 4
Ingredients:
- 1 cup polenta
- 2 cups milk
- 2 – 2 ½ cups water, divided
- 2 Tbsp olive oil
- 2 Tbsp butter
- 3 cloves garlic, grated
- Salt, to taste
- 1 cup parmesan, grated
- 1 cup streaky bacon, cooked until crispy
- 2 – 3 spring onions, chopped
How To Make Savoury Polenta Porridge
- In a blender, pulse the dry polenta to make the granules less coarse.
- Remove from the blender and run your hands through the dry polenta to make sure there aren’t any lumps.
- In a medium pot, bring 2 cups milk and 1 cup of the water to a high simmer, slowly whisk in the polenta.
- Add 1 more cup of water and simmer for 15 minutes, stirring frequently.
- If your polenta is very thick, whisk in the remaining ½ cup water.
- The polenta should be creamy.
- Turn off the heat and whisk in the olive oil and sea salt. Stir in the remaining ingredients, cover and let stand for 5 minutes.
- Season to taste, dish into bowls and top with crispy bacon bits, spring onion and grated parmesan cheese.
