Savoury Polenta Porridge

Creamy, cheesy, and topped with crispy bacon and fresh spring onions, this dish takes porridge to a whole new level!

Ingredients:

  • 1 cup polenta
  • 2 cups milk
  • 2 – 2 ½ cups water, divided
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 3 cloves garlic, grated
  • Salt, to taste
  • 1 cup parmesan, grated
  • 1 cup streaky bacon, cooked until crispy
  • 2 – 3 spring onions, chopped

How To Make Savoury Polenta Porridge

  1. In a blender, pulse the dry polenta to make the granules less coarse.
  2. Remove from the blender and run your hands through the dry polenta to make sure there aren’t any lumps.
  3. In a medium pot, bring 2 cups milk and 1 cup of the water to a high simmer, slowly whisk in the polenta.
  4. Add 1 more cup of water and simmer for 15 minutes, stirring frequently.
  5. If your polenta is very thick, whisk in the remaining ½ cup water.
  6. The polenta should be creamy.
  7. Turn off the heat and whisk in the olive oil and sea salt. Stir in the remaining ingredients, cover and let stand for 5 minutes.
  8. Season to taste, dish into bowls and top with crispy bacon bits, spring onion and grated parmesan cheese.
