Savoury Rice & Creamy Garlic Mashed Potato

Ingredients:

For the savoury rice:

  • 2 cups cooked yellow rice
  • 1 Tbsp olive oil
  • 1 Tbsp salted butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ½ green pepper, chopped
  • ½ red pepper, chopped
  • 2 carrots, peeled & chopped
  • 2 Tbsp chicken stock powder
  • 1 cup water
  • ½ tsp cumin
  • Salt & pepper to taste
  • ½ cup coriander, chopped

For the creamy garlic mashed potatoes:

  • 4 large potatoes, peeled & cubed
  • 2 Tbsp salted butter
  • ½ cup fresh cream or milk
  • 1 Tbsp crushed garlic
  • ¼ cup parmesan cheese, grated
  • Salt & pepper, to taste
  • 1 Tbsp chives, chopped

How To Make Savoury Rice & Creamy Garlic Mashed Potato

For the savoury rice:

  1. Heat oil and butter in a large pan, add in onions, peppers and carrots and cook for 5 minutes until vegetables are tender, add in garlic and cook for about 1 minute until fragrant, then add in cumin and stock powder give it a stir and add in water, allow this to cook until the water has reduced, turn the down the heat and stir in cooked yellow rice. Season to taste with salt & pepper, lastly stir in chopped coriander and enjoy!

For the creamy garlic mashed potatoes:

  1. Place potatoes into a large pot with water, bring to a boil and cook until the potatoes are tender, then drain the potatoes and place the cooked potatoes back into the pot along with butter, cream, garlic and parmesan cheese, use a potato masher and mash the potatoes until smooth and free of any lumps. Season to taste and garnish with chives and parmesan
