As we welcome the new season, we’re using seasonal fruit and vegetables to make a delicious and nutritious veg poke bowl and fruit smoothie!

Ingredients:
1 cup cooked brown rice or couscous
1 cup carrots, thinly sliced
1 cup cucumber, chopped
1 cup cabbage, thinly shredded
½ cup cherry tomatoes, halved
1 avocado, sliced
grilled fish or chicken
For the dressing:
¼ cup freshly squeezed orange juice
1 Tbsp orange zest
1 Tbsp olive oil
1 tsp honey
salt & pepper, to taste
How To Make Seasonal Veg Poke Bowl
Start by preparing the rice or quinoa according to packet instructions, then set aside. Divide the rice or couscous between two serving bowls, top with vegetables and grilled chicken or fish. Add all ingredients for the dressing into a bowl and whisk until well combined, drizzle the dressing over and serve immediately.
Ingredients:
1 cup double thick plain yoghurt
1 cup pineapple chopped
1 cup frozen mixed berries
1 banana, sliced
1 apple, chopped
1 Tbsp honey
How To Make Seasonal Fruit Smoothie
Add all ingredients into a blender and blend until smooth, serve immediately and enjoy
