Sheet Pan Pesto Gnocchi Recipe by Thando ManyoniServes: 4Time: 40 minutes Ingredients:500g potato gnocchi4 tbsp olive oilSaltPepper250g duck sausage, sliced200g exotic tomatoes1 red onion, cut into wedges2 garlic cloves, minced¾ cup basil pesto125g Burrantina MozzarellaFresh basil, to garnish (optional) How To Make Sheet Pan Pesto GnocchiPreheat the oven to 180CPlace the gnocchi and duck sausage on one half of a baking sheet.Place the tomatoes, red onion and garlic on the other half.Drizzle everything with olive oil and season with salt and pepper. Toss both sides to coat.Bake for 30 minutes, tossing half way through the cooking process.Remove the baking sheet from the oven, add pesto and toss everything to combine.Divide into bowls and top each with the burrantina mozzarella and fresh basil.
