Sheet Pan Pesto Gnocchi

  • 500g potato gnocchi
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 250g duck sausage, sliced
  • 200g exotic tomatoes
  • 1 red onion, cut into wedges
  • 2 garlic cloves, minced
  • ¾ cup basil pesto
  • 125g Burrantina Mozzarella
  • Fresh basil, to garnish (optional)

How To Make Sheet Pan Pesto Gnocchi

  1. Preheat the oven to 180C
  2. Place the gnocchi and duck sausage on one half of a baking sheet.
  3. Place the tomatoes, red onion and garlic on the other half.
  4. Drizzle everything with olive oil and season with salt and pepper. Toss both sides to coat.
  5. Bake for 30 minutes, tossing half way through the cooking process.
  6. Remove the baking sheet from the oven, add pesto and toss everything to combine.
  7. Divide into bowls and top each with the burrantina mozzarella and fresh basil.
