Simply Chicken Vienna Noodle Omelette
Getting creative in the kitchen can still be simple and easy.

Ingredients:
4 Simply Chicken Viennas, chopped
1 pack instant noodles, cooked
1 Cup cheese, grated
½ onion, chopped
¼ Cup milk
4 eggs
1 Tbsp chutney
1 Tbsp Butter
2 tsp chives, roughly chopped
1 tsp oil
salt and pepper, to taste
fresh parsley, to garnish
Method:
Preheat a non-stick pan and add oil.
Cook onions for 3-4 minutes, then add the Simply Chicken viennas and noodles with a pinch of salt and pepper and set aside.
In another bowl, beat the eggs, chives, milk, chutney and half of the cheese, season with salt and pepper.
Preheat a non-stick pan and add the butter. Add the egg mixture and cook for 1-2 minutes before adding the noodle mixture.
Close the pan with a lid and allow to cook for 2 minutes.
Using a plate, place on-top of the pan and flip the omelette onto the plate and then place the other side back into the pan and cook for 1-2 minute, until cooked through.
Add to a plate and garnish with the remaining cheese and parsley.
Chefs Tip: You can also fold the omelette over in half to cook through instead of placing onto a plate and flipping over.
If you want to add a bit of heat, use some sweet chilli instead of chutney.
Break up the noodles before cooking to make them easier to add to the omelette.
