Sourdough Grilled Cheese and Basil Pesto Sandwich

  • 4 slices Sunbake Sourdough
  • 4 tbsp butter
  • ½ cup basil pesto
  • 1 cup mozzarella cheese, grated
  • 1 cup cheddar cheese, grated
  • Salt and pepper to taste
  • Pepper

To serve:

  • Soup of your choice

How To Make Sourdough Grilled Cheese and Basil Pesto Sandwich

  1. In a medium bowl, combine the cheeses until combined.
  2. Butter each slice of bread on one side.
  3. Heat a large skillet or grill pan and place two slices of bread butter side down on the skillet.
  4. Spread the basil pesto on top of each slice followed by a generous amount of cheese.
  5. Season with salt and pepper.
  6. Top with the remaining bread slices, butter side up. Toast on both sides until the cheese has melted and bread is golden and crisp.
  7. Pressing down the sandwich as it toasts.
  8. Serve with a soup of your choice
